Currently the envier library is being published without a license in PYPI, I think that this fix should add the license properly: https://packaging.python.org/en/latest/guides/writing-pyproject-toml/#license

I think we could alternatively do license = {text = "MIT License"} but I don't think it matters.

Let's add both a pointer to the file in license and the licence name in classifiers.

envier 0.5.1 has the license added correctly, this looks to be the only
place it's actually pinned: DataDog/envier#34
