Add memray docs

[fiedlerNr9]

This PR:

• adds the memray plugin to the monodocs environment
• Add memray plugin flytekit#2875

Why are the changes needed?

• I updated the documentation accordingly.
• All new and existing tests passed.
• All commits are signed-off.
