Veggie Fried Rice |

- 2 cups cooked rice (preferably chilled)
- 1 tablespoon vegetable oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup mixed vegetables (carrots, peas, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, chopped
- Salt and pepper, to taste

Heat vegetable oil in a large skillet or wok over medium-high heat. Add chopped onion and garlic, sauté until fragrant, about 2-3 minutes.

Add mixed vegetables and cook until tender, about 5 minutes.

Push vegetables to one side of the skillet and pour beaten eggs into the other side. Scramble the eggs until fully cooked, then mix with the vegetables.

Add cooked rice to the skillet, breaking up any clumps. Stir in soy sauce and sesame oil, cooking until everything is heated through, about 3-4 minutes.

Stir in chopped green onions. Season with salt and pepper to taste.
