Update tests that use in_memory profile for aca-py next release #1198

The next aca-py release removes the in_memory profile that many unit tests that many supported plugins uses.

We should prepare a PR for when the next aca-py release happens that updates the tests to use the create_test_profile function that was added in aca-py. It creates an sqlite in_memory askar wallet for testing.
