Allows mounting and riding entities without a saddle. I could've sworn there was already an issue for this but I can't find one

Note: EntitySpeed already does this

Mhm, yeah. Other utility mods also put a client side saddle on, right now entity speed doesn't do that but let's you "control" the entity without steering it, a saddle would let you steer
