the app may log things like matrix IDs when validating them. This could maybe cause issues with GDPR.

Id like to add something (ideally into the existing maubot logging pipeline) that can detect matrix IDs and at least make a best effort redact them so that theres a somewhat-futureproof way of ensuring that instances that need to comply with GDPR, such as fedoras use of this bot, can do so more easily.

It may also be nice to indicate whether this mode is on in the status command
