Update minimum Node version to v22

To ensure we're moving forward with Build Tools, the configuration on hard dependencies should be consistent with global approach within Big Bite. As Node v22 is only about to hit general release on 23rd April 2024, it is advised that a period of stability is left before this update is performed. As a result, until there is agreement on this change, focus should be spent on updating to Node v20 as per Issue #108.
