There's a jekyll plugin for mermaid, https://github.com/jasonbellamy/jekyll-mermaid.

But it requires mermaid.js to be present in the installation directory. As this file is around 2.33 MB of minimized size as of version 11.0.2, source https://cdn.jsdelivr.net/npm/[email protected]/dist/mermaid.min.js, we'll skip this and work with screenshots.
